Chai is a personal favorite of mine. Now, don’t get me wrong, I’m like a parent and love all of our teas. But, I would be lying if I said I didn’t have a few favorites. (Don’t worry mom & dad, I know I’m the favorite. Your secret is safe with me). Back to the chai. I would love to make a million chai recipes. And I will. But with a friend’s birthday in mind, I went the cupcake route on this one.
Grab an infuser ball or steeping tool of your choice. Filters, cute infusing duck, whatever you have. Scoop 3 Tbsp Chai Love into your tool and steep in your saucepan of milk.. Low heat, please. And just 5 minutes. With some stirring in between. Milk gets feisty when it gets too hot and sits too still for too long. After 5, knock out prep step #2. Heads up – it says to set 2 Tbsp tea aside for icing. You don’t wanna miss that. Next, all ingredients come together like the best of friends in a big ‘ol mixin’ bowl. If you are the fancy kind who has cupcake wrappers, kudos to you. Go ahead and put those in your cupcake tins and fill them ¾ full with batter. If you typically forget to get those little fancy-pants wrappers (ahem, me), no worries! Thats what the likes of Pam are for. Grease up your tins and you’ll be fine when you scoop the batter in. Oven @ 350 and bake them up!
Patience is a virtue, so be virtuous while these cool. A way to distract yourself? Mix powdered sugar into 2 Tbsp chai milk. Start with a small amount of powdered sugar and keep adding until you get the beautiful icing consistency you’ve always dreamed of. Cool? Cool. Ice those puppies up. Last step: Chai your creation! (See what I did there?)
